Unit Definition

ACID PROTEASE

One Acid-protease unit(U) equals to the amount of enzyme which hydrolyzes ferment to 1μg Tyr per min, at 40℃ and at pH3.0.

ALPHA-AMYLASE

One Alpha-amylase unit (U) is defined as the amount of enzyme which hydrolyzes 1g soluble starch per hour, at 60°C and at pH 6.0.

XYLANASE

One Xylanase unit (U) is defined as the amount of enzyme which liberates 1μmole xylose per minute from 5mg/mL substrate solution, at 37°C and at pH 5.5.

CELLULASE

One Cellulase unit (U) equals to the amount of enzyme, which hydrolyzes CMC-Na to get 1μmol of reducing sugar (in glucose) per min, at 50°C and at pH 4.8.

GLUCANASE

One Beta-glucanase unit (U) equals to the amount of enzyme, which hydrolyzes 4mg/mL glucosan to get 1μmol of reducing sugar (Glucose) per min, at 37°C and at pH5.5.

PHYTASE

One Phytase unit (U) is defined as the amount of enzyme which liberates 1u mole inorganic phosphorus per minute from 5.0 mmol/L sodium phytate at 37℃ and pH5.5 under the conditions of the test.

MANNANASE

One Mannanase unit (U) is defined as the amount of enzyme which liberates 1μmole mannan per minute from 3mg/mL substrate solution, at 37°C and at pH 5.5

GLUCOAMYLASE

1 unit of Glucoamylase equals to the amount of enzyme which hydrolyzes soluble starch to get 1 mg glucose at 40 ºC and pH 4.6 in 1 hour.
